ingredients:
1 can of black beans, rinsed
1/2 of a small jicama, peeled & diced
1 bell pepper, diced (any color, I used a mixture of red, orange & yellow, because I had them on hand)
1/4 cup red onion, diced
1 cup corn, cooked
1 handful of cilantro, chopped
1/4 cup olive oil
1 lime
1 tsp salt
1/4 tsp cumin
1/8 tsp pepper
directions:
Place the beans, chopped vegetables, corn, and the cilantro in a bowl. In another bowl, whisk together the olive oil, the juice from the lime, salt & cumin. Pour over the vegetables & stir. Serve chilled.
note: you want the size ratio to be about the same for all of the vegetables, so chop them accordingly.

ReplyDeleteI served it with shrimp and quinoa when I made it, but I really just intended for it to be around for lunch/snack because I'm constantly grazing.
