tabbouleh




ingredients:
1 cup bulgar wheat
1/2 cup lemon juice (about 2 large lemons, or 3 small)
1/2 cup olive oil
1 1/2 tsp salt
1 cup mint, minced
2 cups curly parsley, minced
1 cup green onions, chopped
1 large, seedless cucumber, chopped
3 tomatoes, chopped


directions:
Pour 1 cup of boiling water into a large bowl. Add the bulgar wheat, and cover with a towel while you're chopping up all of your ingredients. Once the wheat has absorbed all of the water, stir in the olive oil, lemon juice & salt. Then stir in the onions and all of the herbs. Last, fold in the cucumbers and tomatoes.

  3. This is making me so hungry. I am very excited for the warmer weather because all I crave are salads and sandwiches. (could be because my apartment doesn't have AC and turning the oven on is a crime)
