broccoli & cheddar soup

You guys, this soup is so good. I have had an overflow of broccoli and green onions from my garden, and I've made this 3 times in the last 2 weeks. I cannot get over how thick and savory (and filling!) it is. It can be served just as a soup with a crusty bread, or on top of a baked potato with Greek yogurt or sour cream.. and I've even been serving it to my little one as a sauce, on top of pasta.










ingredients:
1 bunch of green onions, bottom white part only, chopped
1 shallot, chopped
1 broccoli crown, chopped (stems & stalks)
1 clove garlic, chopped
2 tbsp butter
drizzle of olive oil
4 cups broth
1/4 tsp white pepper
1/2 tsp salt*
1/2 cup whole wheat flour
1 1/2 cups milk (I use 1%)
1 cup shredded cheddar cheese



directions:
In a large pot warm a drizzle of olive oil & the butter over medium heat until the butter is melted. Add onion & shallot and cook for 2-3 minutes, until softened, then add the garlic and give it a stir. Add the broccoli and the broth. Season with salt and pepper, cover and bring to a boil. Reduce heat and simmer for 15 minutes, or until the broccoli is soft. Remove from heat, and puree thoroughly. Return the puree to medium high heat. In a mixing bowl, add the flour to the milk, a little bit at a time, whisking until smooth. Add the mixture to the soup, and stir. Slowly bring the soup to a boil, uncovered, and then reduce heat to low, stirring the whole time. Add the cheese and stir. Remove from heat. The soup will thicken as it cools.

*Taste test for the salt, depending on the size of your head of broccoli, you might want to add up to 1/2 tsp. more (totaling 1 tsp.)

  2. Cheese broccoli soup is one of our favorites! This is pretty much how I make it but I've never used wheat flour before. I'm definitely going to try that.

    And the sauce on pasta? What a GREAT idea!

  8. I haven't made broccoli soup in so long! Maybe I will make some this week. I have a really good vegan recipe (somewhere...) that is just so simple to make. God i'm hungry now!!!
