This is one of those things that never lasts long once it's made. I took it to our Thanksgiving dinner as an hors d'oeurve and it was the first thing to disappear. I know cranberry salsa just kind of sounds weird, but something about it works. I served mine with multi-grain tortilla chips, but it's also really good with pita chips or sliced ham.
1 package of fresh cranberries
1 lime, juiced
1 jalapeno, seeded & chopped
1 bunch of green onions, chopped
1 bunch of cilantro, chopped
3 tbsp sugar
salt, to taste
Rinse cranberries & pulse in a food processor a couple of times, until they are roughly chopped. Add the rest of the ingredients, and pulse a few times to combine. Depending on tartness of the berries and the spiciness of the pepper, you might need to add more sugar to balance out the flavors. I used about 1/4 tsp of salt in mine.
