baked eggs
This dish has been my go-to guilty pleasure as of late. It's really all I want to eat. It's so savory and surprisingly filling, and it's perfect for cooler weather. I came across this recipe, changed a few things and came up with this:
ingredients:
1 cup marinara sauce
2 eggs (I use one whole egg, plus one egg white, to lower the fat content)
2 tbsp. crumbled feta
2 tbsp. shredded parmesan
handful of chopped parsley
directions:
Preheat oven to 350ºF.
Place the marinara in a small baking dish, and top with the feta cheese. Make a shallow spot in the middle for the eggs by pushing the marinara towards the sides of the dish. Crack the eggs into that area. Season with salt/pepper, top with shredded parmesan and parsely.
Bake for 10 minutes, or until eggs have set. Broil for 1-2 minutes to brown the cheese, while watching closely to avoiding overcooking.
Serve with a warm baguette.

ReplyDeleteMy mouth is watering! I make something similar... Poach an egg (or 2) Put each on a halved avocado (where the hole from the pit was)put in a baking dish, cover with marinara and shredded cheese. You will thank me later. (sometimes i cut off a big of the outside of the avocado so it sits flat and doesn't fall over)

Emily - I LOVE eggs and avocados together. I'm gonna give that a try. I usually just put a fried egg on a tortilla and top it with sliced avocado & cheese.
