This is one of those things that never lasts long in our house. I am constantly making it, because within a day or two it's gone. It's easy to make, healthy and perfect for summer, because it doesn't require any cooking at all.
We eat it with chips, pita, cucumber slices and as a meat substitute (or a spread) on sandwiches. So, so good.
1 16 oz. can of cannellini beans, drained
1/2 cup italian parsley
1 lemon, juiced
1 clove of garlic
1 tsp. salt
1/2 tsp. black pepper
1 tbsp. olive oil
Puree all ingredients in a food processor.
