basil pesto

A couple of weekends ago, I threw together a pesto and I only had feta cheese on hand, so that is what I put in. It was really good & I couldn't wait to try it with basil.



ingredients:
2 cups fresh basil
1/3 cup walnuts
1/3 cup crumbled feta
1/3 cup olive oil
1/2 lemon, juiced
2 garlic cloves
1/2 teaspoon salt
1/2 teaspoon pepper


directions:
In food processor, pulse the basil, nuts, garlic & the salt/pepper until chopped finely. Stream in half of the olive oil, then stir in the rest, along with the feta. Top with a little bit of olive oil, if not used immediately. Store in an air tight container.

  2. That sounds so good! Just the other day I used store-bought pesto in a recipe and I thought, "Hmmm... I should look up how to make this myself!" You're awesome. And a mind-reader :)
